5:00am     My daily routine started, listening to music and going to work.


Morning prep & Brunch 

The alarm ringing in the clear dawn of the class worries that I will be late for the restaurant, and the drowsy class is driven to sleep. It seems like the day is not over yet, but the sound of an alarm on my cell phone telling me to go to work prompts me to be tired.

Due to the cafe operation policy, recipes are all secrets and are mutually exclusive, so we never disclose restaurant recipes, but there are useful recipes shared on Social communities, so I thought it would be good to refer to share for menu development ideas.

There were various types of bread that I did not know about.



THE BASIC. Rye Sourdough
It is the most basic and simple choice at a brunch cafe. It is soft and light, and the flavor of rye flour leaves a deep lingering impression. It has a nutty texture that goes well with any breakfast menu.
The harmony of the aroma of rye is a plain base for any main dish in a simple morning toast, various dips, fruits, vegetables, meat, herbs, etc., and the main ingredient of Benne Sandwich, which is in the spotlight in Australia, is also the dough of this bread. 


THE CLASSIC. Croissants
There are times when you make your own croissants, but in general cafes, the most efficient way to operating costs is to shorten the preparation time by ordering pre-baked, frozen dough croissants.

If jointly purchase a frozen bakery sold near the cafe run, that can provide a fresh and fluffy 'Basic Bakery' service. If open a cafe with the basic construction and appearance of the bakery that customers are looking for, there will be no unfortunate incident where customers who find the cafe will be disappointed and just leave.


I had to go through a difficult time that seemed endless, making waffle dough, sandwiches, and various pieces of bread and desserts one by one. Fortunately, the chef I met at another cafe was running it in such a friendly way. Unfortunately, after a few months, I have to say my final goodbyes, but I am sorry that I have not been able to express my gratitude to him.

Indeed, this one word was a chef who changed my life and destiny.

Completed baking and ..

It was one of the reasons I was bored at the cafe, and there were things could do self basically espresso coffee, toasting, and ,sandwiches, It's like a stretch to wake up from a deep sleep during the night, waking up in the morning to tidy up the bedding.


Even if one doesn't have to go to a cafe, even if one doesn't go to a restaurant, if there is a friendly human, a cozy house, and a place where can chat with friends and family, there is becomes a cafe It could be simply define the value of the cafe. 

If is a place where can have friendly conversations and smiles.



In addition, there were many types of bread, among them 

I do not know how gluten-free bread is made, but I wonder to find a recipe for bread that many people like and have been looking for with a light and savory texture, and I want to develop a better recipe to share with many people and meet with a better product.


Gluten-Free provides Cake

  • 3/4 cup butter, softened
  • 1/4 cup Cane Sugar  + 1 tsp. for topping
  • 4 large eggs, at room temperature
  • Zest of one large lemon
  • 1 tsp. GF baking powder
  • 2 Tbsp. Milk


  • Cane sugar is sugar that has not been refined. Since it has undergone less processing, it has more vitamins than its refined counterpart. Glucose, fructose and sucrose are all found in cane sugar. While it is healthier than table sugar, you should still keep its use to a minimum according to the American Heart Association.

    Coconut palm sugar has a lower glycemic index (GI) than regular sugar, and it comes from coconut tree sap. People with diabetes may prefer it to regular sugar for this reason, but the carbohydrate and calorie counts of both are the same. Try sprinkling some coconut palm sugar on your oatmeal or popcorn for added sweetness.




    Coconut Pudding Cake


    Cookie Crust

    5,3 oz (150 g) oat cookies or other (gluten-free) vegan cookies (*see notes) 2⁄3 cup (75 g) vegan butter melted


    Coconut rice pudding

    4 1⁄4 cup (1 l) coconut milk or other non-dairy milk

    1 1⁄4 cup (250 g) round short-grain rice or Arborio

    1⁄2 cup (100 g) sugar or to taste

    1-2 tsp vanilla extract


    Raspberry Topping

    2 cups (250 g) frozen raspberries

    1 tbsp sugar of choice

    1 tbsp cornstarch dissolved in 2 tbsp of water



    Rice Dessert Recipe

    INGREDIENTS
      

    • 1 l rice milk or any other plant-based milk
    • 250 g rice flour
    • 1 teaspoon vanilla extract
    • 3 apples
    • 1 lemon
    • 20 g maple syrup
    • 1 tablespoon cinnamon

    INSTRUCTIONS
     

    • Put rice milk and vanilla extract in a pot and bring to a boil.
    • When it starts boiling, add oat and cook for around 30 minutes, or until rice becomes soft.
    • Meanwhile, peel and shred apples and prepare lemon juice.
    • When rice is cooked, add apples, lemon, cinnamon, and maple syrup and mix it well together.
    • Put it in a pan and bake for 40 minutes at 180°C.
    • When it's baked, let it cool down a bit, so it can harden and you'll be able to cut it into nice pieces.

    I hope to develop a recipe like a friendly meal made, but it was difficult to match it with detailed measurement and temperature. Thank you so much for sharing the valuable recipe and for giving detailed points.

    Every day I do what I want to do, where have my future hopes gone? I hated a part where only the things I hated the most were given to me. 

    The question of why I had to do this did not disappear even in the midst of a busy time all day long.

    After working all day, I was able to find a little time for lunch, even if it was late, as I went to the school where I had to extend my visa to get a bachelor's degree in hospitality management.

    When preparing the dessert baking, all the focusing and attention is always carefully observed, including the fresh ingredients, the meter and the room air temperature. The scent of the surroundings.



    When learn baking, cooking, and cafe culture, can't miss the 'French' culture. A world where recipes are basically in French and a paradise and hideout for sweet and beautiful meaning of desserts. It's a bit late, but I recommend going to Global Festival while visiting Australia.








    I wanted to stop cooking as a full-time job and wish bake one of the hobbits, but I never thought that I would even have it as a job. I didn't know what the names were that I had never heard of except for making cakes and snacks, but from the past time when I was dedicated to work 10 hours a day.




    To be honest, I love the type who enjoys brunch, so the morning was JUST enjoyable to work as possible side. The image I've been looking for around the time the sunshine seeps into my daily routine is about the end of the day when i greet the monotonous routine. It's like on the cloud.


    After working for 16 hours a day, or at least 8 hours a day, I am so sad and full of tears that I am tired of cooking. Even just hearing about cooking is sad enough to say goodbye to the world. 


    Would like to go on a trip that promises to meet only good people.













    Melbourne morning and weekend vibes

    Mornings and weekends in the city of Melbourne are always like this. Before the friendly yet warm morning sun sets in, the chefs who are busy preparing dinner at the cafe are having a conversation to open a cafe. The air at dawn is cold, but a city where there is always a comfortable community space for people.
